Our thermal indoor pool (7 * 10 m, 30 ° C), with thermal water from the original Roman spring, can be easily reached by lift in your bathrobe. Sitting bubble bench, waterfall shower and massage water jets are at your disposal. Large panoramic windows allow a view of the beautiful landscape.

From here you have direct access to the garden terrace with a beautiful panoramic view of the mountains of the Black Forest and the Vosges and the vineyards of the Markgräflerland and the Oberhein plain.

Wine from the region

Enjoyment for wine lovers

Out of conviction, we present you here exclusively wines from the Markgräflerland region (from Freiburg to Basel). On a good 3000 hectares, mainly the noble Burgundy grapes and of course the typical Chasselas are grown here. In the mild climate on mineral-rich loam/loess soil, fresh white wines and light, drinkable red wines are produced.

To make it easier for you to choose, we have noted alcohol, residual sugar and acidity for each wine and made a few personal notes. We are also happy to advise you individually.

So that you don’t have to drink the whole bottle at once, we bring the selected bottle to your table again and again – until it is empty.

Weiße und rote Rebsorten im Markgräflerland

Gutedel

Die meistangebaute Rebe im Makgräflerland.
In der Schweiz und in Frankreisch unter dem Namen Fendant oder Chasselas bekannt.
Die 5000 Jahre alte Traubensorte kam 1780 durch Markgraf Karl Friedrich von Baden in unsere Gegend, der ihn vom Genfer See her mitbrachte.
Die Beeren sind groß, locker bis dichtbeerig und haben eine zarte Beerenhaut. Die Blüte ist kälteempfindlich und verlangt eine windgeschützte Lage. Der Boden sollte tiefgründig und nicht zu trocken sein.
Dann entsteht daraus ein frischer, leichter Trinkwein mit wenig Alkohol und wenig Säure.

Eine Mutation des Spätburgunders im Mittelalter.
In Frankreich nennt man ihn „Pinot gris“ oder „Tokay d’Alsace“, in Italien „Pinot grigio“.
Mild ausgebaut wird er als Ruländer bezeichnet. Ein körperreicher, wuchtiger Wein, der immer ordentlich Restsüße hat.
Trocken ausgebaut und etwas früher gelesen ergibt er einen guten Speisebegleiter für alle kräftigen Speisen.
Er liebt warme Böden und bringt, bei guter Lage, fast von allein sehr hohe Mostgewichte.

Auch „Österreicher“ genannt, weil er im 17. Jahrhundert aus dem Donaubereich kam.
Bis in die 70er Jahre waren ca. ein Drittel aller Rebstöcke in Deutschland damit bestückt. Heute sind es gerade mal 5, die gerade in neuerer Zeit eine schöne Renaissance erfahren.
Durch Ertragsbegrenzung und mehr Pflege im Weinberg entsteht ein toller, harmonischer Wein mit feiner Säure, der aber nur in guten Lagen gepflanzt werden sollte, da er besonders stark das Terroir widerspiegelt. Bei uns im Lehm-Löß mit dem mediterranen Klima ergibt es sehr fruchtige Weine mit solider Substanz und frischer Säure – aber nicht zu wuchtig.
Der optimale Spargelwein …

Eine Mutation des Grauburgunders im 16. Jahrhundert.
In Frankreich „Pinot blanc“ und in Italien „Pinot bianco“ genannt, ist sie die hellste der Burgundersorten.
Bis zur Reifezeit sind die Burgunder im Weinberg fast nicht zu unterscheiden und haben ähnliche Bedürfnisse an Boden und Klima.
So bringt der Weißburgunder bei längerer Reifezeit gute Mostgewichte und ergibt einen feinfruchtigen Wein mit frischer Säure.
In Übersee wird er oft vom Chardonnay verdrängt, weil dieser deutlich mehr Säure hat. In Europa schmeckt dieser Abkömmling des Weißburgunders aber oft zu grasig.

auch Rivaner genannt, weil der namensgebende Prof. Müller aus Thurgau glaubte Riesling und Silvaner gekreuzt zu haben. Gentechnisch können wir heute nachweisen, daß es Riesling und Madleine royale (Ein Gutedelhybrid) war.
Da er als ertragssicher gilt und wenig Anspruch an den Standort hat, wird er oft als Massenwein verkauft.
Bei einem pfleglichen Umgang und einer deutlichen Ertragsbegrenzung entsteht jedoch ein bekömmlicher, aromatischer, angenehmer Wein, der wegen seiner geringen Säure jung getrunken werden sollte.

Rotweine, die wie Weißweine gekeltert werden.
Wenn man vor allem den Saft der Rotweintraube vergärt, entsteht ein rosefarbener Wein, denn der Farbstoff der Traube sitzt an der Innenseite der Traubenhaut.
Wenn dazu nur der Saft von einer einzigen Traubensorte verwendet wird, darf man ihn als Weißherbst bezeichnen.
Durch das frühzeitige Abpressen der Maische gelangen nicht nur weniger Farbstoffe, sondern auch weniger Gerbstoffe in den Wein.
Eine echte Alternative und ein leckerer Sommerwein.
Ganz aktuell: Blanc de Noir ein echter Weißwein aus Rotweintrauben gemacht

Der König der Rotweine.
Trotzdem die Rebe recht anfällig für Krankheiten ist, beste Lage und besonders tiefgründige Böden braucht, extrem dünnhäutig und dichtbeerig ist, bleibt sie bei Kennern die beliebteste Rotweinsorte. Der feine Duft, die Struktur, die klar das Terroir erkennen läßt, die Mineralität, die bei jedem Boden anders rauskommt….
Typische badische Spätburgunder sind eher leichter, oft rubinrot statt tief burgunderrot, meist gerbstoffbetont und werden jung und etwas kühler getrunken.
Bei den Spätlesen wird aber eine so starke Ertragsbegrenzung gemacht, daß man auch bei uns einen dunklen, extraktreichen, kräftigen Wein erhält.
